Application of membrane filtration technology in the production of alcohol free beer

2021-02-18

Non alcoholic beer is a new member of the beer family, so what is non alcoholic beer? Alcoholic beer is a type of beer that retains all the ingredients except for alcohol. It has the same color, aroma, and taste as beer, and has an alcohol content of less than 0.15% (volume fraction), which is essentially non alcoholic. Alcoholic beer is rich in nutrients and has a good taste. Compared with alcohol, it has no adverse effects on human health caused by alcohol; Compared with ordinary carbonated beverages, it has higher nutritional value, contains 18 essential amino acids and multiple trace elements required by the human body, is low in calories, and helps digestion. Alcoholic beer well meets the needs of modern people in pursuing a healthy lifestyle, and the use of membrane filtration technology is currently the main method of producing alcoholic beer.

The beer is pumped into the reverse osmosis membrane module by membrane filtration technology. Water and alcohol molecules driven by pressure can overcome the natural osmotic pressure pressure and be removed through the membrane, while color, aroma, taste and nutrients are retained in the beer. Due to the partial removal of water along with alcohol during the separation process, purified water that has undergone degassing and desalination treatment is continuously added on the feed side. In addition, it is necessary to supplement non alcoholic beer with carbon dioxide to enhance its taste. There are also dialysis membrane separation methods commonly used in this outer membrane separation method, such as in Germany. This method often uses hollow fiber dialysis membrane components, where beer and dialysate flow backwards through both sides of the membrane. The separation process is driven by the concentration difference of the material, and the alcohol molecules in beer diffuse towards one side of the dialysate to achieve the purpose of removal. However, during this process, many volatile fermentation byproducts in beer will also be lost, thereby reducing the quality of alcohol free beer.
